Vegan  Linzer Cookies


These classic cookies are the perfect balance between sweet and tart!

Main Ingredients

unbleached all-purpose flour

vegan butter or margarine

confectioners’ sugar

lemon zest

soy milk

vanilla extract


preserves of your choice


Sift the flour and salt into a bowl and add the vegan butter. Add the remaining ingredients and mix to form a soft dough.


Roll and cut circles out of the dough. Chill them in the freezer.


Roll out the other half of the dough, cut out circles then cut out holes in the middle of each with a smaller cutter.


Bake, cool, and fill the bottom halves of the cookies with preserves.


Dust the top halves with confectioners’ sugar, sandwich together and enjoy!
